The number of times we go out to eat continuously increases. This means the use of vegetables in restaurant kitchens is gaining importance.
But are restaurants even able to affect vegetable consumption? A study by Dutch Stichting Variatie in de Keuken (EN: foundation variety in the kitchen) and Wageningen University and Research Centre gives a distinct answer: yes, indeed; bringing positive results to as well restaurant owners as consumers.
